     说到豆腐小镇啊~小编可是意犹未尽了，豆腐小镇位于淮南市的谢家集区，在豆腐小镇，所有员工都统一穿着的汉元素，每当进入小镇中，有犹如置入了时光的穿梭中。

你们知道都有哪几道工序吗？

第一步：选豆子，泡豆子。首先，要挑选颗粒饱满的豆子，然后豆子要泡一下，主要是基于两点考虑。一是口感，蛋白质吸水后会更均匀，口感细腻。二是豆子中的单宁、植酸等抗营养物质会阻碍矿物质的吸收，浸泡能使这些抗营养物质溶出。

第二步：磨浆、滤渣。在磨的作用下，使水和大豆蛋白质混合成均匀的胶体溶液。过滤就是把豆浆中的豆渣分离出去。豆渣的成分主要是纤维素和杂质，经过过滤后，可使豆制品的品质细腻涧滑提高营养价值一是过滤工艺。

第三步：熬浆、卤水点豆腐

要使胶体溶液变成豆腐，必须点卤。盐卤能使分散的蛋白质团粒很快地聚集到一块儿（即胶体的聚沉），成了白花花的豆腐脑。再挤出水分，豆腐脑就变成了豆腐。

豆腐小镇概况

刘香（淝水）豆腐小镇位于谢家集西北部八公山脚下，东邻寿县古城和淝水之战古战场，北靠八公山和卧龙山景区。周边景点众多，区位条件优越。是国家3A级景区，景区集购物、休闲、参观三个方面为一体。通过建筑构造与景观造型等方式，将豆腐文化与汉代文化相结合。

豆腐宴是特色传统名宴，是以八公山豆腐为原料，将不同的豆制品制作成特色菜肴。以豆腐为主料烹制的名菜有：一品豆腐、芙蓉豆腐、荷花豆腐等，色香味形，美仑美奂。
